Bathroom Scale2 more days and the healthMC challenge will be over.  Yes it’s been almost 21 days.  I hope you took full advantage of those days and made some progress.

Today’s post is  about a sensitive subject especially for women “THE SCALE”.

I remember when I started my healthy lifestyle journey, I had my mind set on a number.  Back then the number was 160 pounds.  Once I reached that number I started to train to compete and my nightmare with the scale begun.  The magic number for me was 125 pounds on stage.  It was a nightmare because no matter what progressed I made, no matter how my body changed, I wasn’t satisfied with the number on the scale.  If it didn’t read 125 pounds I wasn’t a happy.  It got more frustrating as I tried harder to reach the number and I couldn’t go past 130 pounds.

Something was not right with that picture. So I asked myself “Is my new lifestyle completely dependent on a scale? Am I going to work myself out to death until I reach THE NUMBER?”  I grew tired of being frustrated with the scale and stopped stepping on it altogether.  What was happening is that every time I stepped on it, even if it was once a week or once every 2 weeks, I stepped down disappointed and wanting to work harder next time.  I was taking notes of my measurements but the number on the scale was more important.  One day flipping the pages of my workout journal I noticed a BIG difference on the measurements for 2 months with a ZERO difference in weights.  Call it Aha! moment, but for me it was the end of my nightmare and the beginning of a balanced, healthy and positive journey.

How well you are doing is not about the scale ONLY.  The scale can be going down and you nutrition sucks with high body fat.  Look at the big picture and consider those questions next time you get frustrated at the numbers on the scale

  • Is there a change in my waist size?
  • Are my clothes fitting differently?
  • If you just had a complete physical and went back for another one, are the numbers different this time?
  • Did you go from taking high cholesterol medications to not having to take them anymore?
  • Can you go up a couple of flight of stairs without feeling like your heart is coming out of your chest?
  • Can you run 5 miles instead of 1 mile now?
  • Did you go down 1 dress size?
  • Can you fit in your skinny jeans again?

In your journey to a healthy lifestyle, always focus on the big picture and DO NOT, ABSOLUTELY, NOT  make this about the scale. Otherwise, you never enjoy the ride and you allow a piece of metal to control your life.

Help Me Become a Cover Model

This Month I found out that I was one of the finalists for Status Fitness Magazine 2010 Cover Model Contest, the world’s best fitness, bodybuilding and MMA magazine.  It is an amazing privilege to be featured among such amazing and talented athletes in the fitness world.  I have to say making it to the finals is surreal, in fact I am still pinching myself.  I  still remember when I decided to enter the contest, I didn’t have a portfolio, the only pictures I had were from my very first photo shoot with the talented Leigh Hagen of Imirage Photography.  It was also my first year competing nationally.  Those of you who don’t know my story, my journey started when I tipped the scale at 238 pounds, and after 1 year and half of sweat and dedication I decided to pursue one of my dreams and become a fitness competitor.

Today I need your vote as we approach the last moments of the contest.  I also want to urge you to go for your dreams and to be bold.  You see some of the doubts I had when entering this contest was that I have no experience at all as a model, I’ve never won a show, I was going against some of the seasoned models in the industry. Well here I am today, a finalist. Sharing this with you is to show you that when you don’t start, you don’t finish and you certainly end up nowhere.  The worst thing that can happen is you breaking even.  Even if you have doubts, do it afraid, start somewhere for Christ sake, just go……

Simple Chef: Lemon Paprika Shrimp

Hello There,

This week I have for you a simple lemon paprika shrimp paired with whole wheat couscous with some steamed zucchini.

  • Put 1 lb of shrimp in a ziplock bag and season it to taste with salt, pepper, a bit of Mrs. Dash, 1 tsp of paprika, 1 tbsp of extra virgin olive oil and squeeze half of a lemon juice over it.. Let it sit for 15 minutes in the fridge.  Warm-up a skillet and spread the shrimp evenly and cook each side for 3 minutes.
  • Prepare the couscous by boiling 1 cup of water first.  Take the boiled water put it in a container with a lid and add 1 cup of whole wheat couscous and cover for 5 minutes.  Spread with a fork when done.
  • Boil 1/4 of water and add the zucchini cut in small half-moon shape.  Steam the zucchini for 3 minutes.

And Voila! Clean, Yummy and easy to prepare.  Enjoy and spread the love….

  1. Weleda Birch Cellulite Oil
    The top 3 ingredients on this magic oil are : apricot oil, jojoba oil, and wheat germ oil.  I don’t have cellulite so I can testify to how good it is for cellulite, but this oil does an amazing job toning your skin.  I apply it straight out of the shower while my skin is still wet.     If you are a gamer like my husband and I you have to get one of these.  Enjoying your XBox  game with the wireless headset is a whole different experience.  You have the surround sound effect and you really get into the game.  It’s also ideal if one of you wants to watch a DVD without disturbing your partner. Just mute the TV, press the on button on your headset and not a sound is coming out of the TV.  You have your own movie theater sound effect on your couch or you can enjoy your hobby without disturbing.  You know when you are watching a movie and a F word comes out of nowhere that you are afraid your child will pick up if they are playing in the next room (you know they hear and repeat everything) well this is a solution, you are cooking and watching a movie, and no worry about your kid hearing a bad word because the TV is too loud.

    You always have your cell phone with you and shopping for your vitamins, body scrub, protein powder just got easier with this iPhone App.  Just scan the bar code with your phone and it tells you every where online and locally you can find this product for less.  Most of the time I order  online because I end up paying half the price  displayed in a local store and I get free shipping or a flat rate shipping no matter how many items I order on some sites.  If the app can’t find the item, simply a picture of the item to Red Laser and they will update their database.  Don’t shop without this app. You will save plenty especially if you are competing.  Check out RedLaser to get this app FREE.
  5. 20 lbs weight vest
    You know those times you hit a plateau and need to bring your workout up a notch.  Put this bad boy on while you are on the stairmill, stairmaster or walking on an incline, I guarantee you will love the results.  It has 20 removable  1 pound sand bags.  You can start small at 1 to 10 lbs and add 2 more lbs weekly until you reach 20 lbs.  It’s very challenging and well worth it.  I bought mine at walmart for $50 a while back but now it costs $37.77 (what’s up with the 77 cents? anyways) if you order online.

Simple Chef: Simple Tilapia and Red Potatoes

Welcome to Simple Chef. This is section of the blog is a response to several emails I got today asking me, “What in the world do you eat? …. please can you share”. Yes I will,  and here is the first new recipe that I tried fresh out of the oven.

I know that I cooked like a mad woman yesterday but I cannot resist trying something new especially if I already have the ingredients in the fridge. All I had to get from the grocery store was 1 red pepper and 1 lemon. I also use my in-laws as an excuse to cook more things,  and trust me they have a big smile on their faces when I drop off my son for baby-sitting along with clean food.

Today’s recipe was found in on my fave “Oxygen Magazine”. It’s a Tilapia baked with red potatoes and it was super easy to make. I took pictures to share with you.
For those of you who do not wish to go look for the recipe, “Simple Chef” is here to make it simple.

Start by cutting 1/2 cup of red pepper and 1/2 of pitted kalamata olives and put it aside





Season your tilapia with Mrs. Dash, paprika, and 1/2 tbsp oil let it seat for 20 minutes





Then 1lb of small red potatoes cut in half, 2 tbs extra virgin olive oil, 1 lemon thinly sliced, 1/4 tsp pepper, 1/4 tsp sea salt mixed together

Bake potatoes first for 20 minutes, add tilapia and bake again for 15 minutes, add peppers and olives, and bake for another 10 minutes and

Finding your “Momentum” in Your Weight Loss Journey

You know the feeling and excitement that comes with starting a workout and eating plan to get in that nice dress that we bought 3 sizes smaller. “This is it, now or never, I am going to do it this time”.  2 weeks go by or even 3 weeks, you get invited to a social gathering or just to have lunch with a friend and all it takes is one bad food after another and we spiral into this never-ending sabotage galore.  “I’ll start over tomorrow”, than tomorrow becomes Monday “It’s better to start on Monday or Sunday” and 1 month goes by and the 5 pounds we worked so hard to lose are back with friends and cousins (extra pounds).

How do you keep your momentum? What do you do?

I can only share my own experience.  Boy I started over so many times that I lost count.  I started over so many times that I got tired of starting over.  Every time I started over I picked a different diet, a different plan, a different workout (that was way before my clean eating days and a workout plan that works).  I was the perfect walking advertisement for Yo-Yo dieting; you might as well call me “Yo-Yo mama”.

Frustration sets in and you just give up all together or you go back to your plan, you’re on for 3 days and off for the rest of the week.

I found my mojo, in this case momentum by first stopping all the nonsense and establishing a WHY?  Remember Mr. Why?  But knowing why is not enough by itself if you don’t establish good habits.  I needed to do an inventory and really think about how to sabotage-proof myself.

  1. I got rid of all the bad foods and especially the cookies that I bought or anything else for that matter using my son as an excuse.  If it’s not good for me, well it’s not good for him either, end of discussion it is not coming in my house, I am not buying it.  I am the parent and he eats what I give him, and that’s that.
  2. The toughest part was changing my association, people I hung out with or spoke to most of the time.  If 2 people get together and talk about how they are always sabotaging their efforts and not going to the gym or doing what needs to get done to reach their fitness goals over and over and over, they both get nowhere.  They get comfortable consoling each other and just get stuck in a negative momentum (Yes momentum works both ways).  Enough! I want to talk to people who build me up, who saw me at a size 6 when I was a size 16. People if I complain to them won’t put up with it and tell me in my face that I was not heading towards success with this attitude (I hope Beau is not reading this…).  I decided it was better to have quality instead of quantity around me.
